Cinnamon Toast (from Stacey S)
Ingredients:
- 5 tbsp. butter
- Cinnamon sugar, made with 1/4 cup sugar and 1 tbsp. cinnamon
- 4 slices bread
Soften butter. Mix the butter with 3 teaspoons cinnamon sugar. Spread generously on bread. Broil for 3 to 4 minutes until crispy. Makes 2 servings.

Pigs N a Blanket (from Martha P for Bethany)
Ingredients:
- 1 can of biscuits
- 1/2 lb of Eckridge skinless dinner sausage
- 10 slices of colby jack cheese (cut from an 8 oz block)
Cut the 1/2 pound of sausage to make 10 slices. Flatten uncooked biscuit dough. Place cheese in center; then place sausage on top of cheese. Wrap and cover sausage and cheese completely. Make sure that the edges of the dough are sealed, or cheese will leak out when it is cooked. Repeat until all 10 biscuits are used. bake in the oven for what ever time and tempurature listed on the can biscuits. Let cool for 5 minutes before serving to young ones because hot grease can get trapped in the biscuit.

Pita Pizza Bites! (from Lindsey L for Addie)
Ingredients:
- 2 Whole Wheat Pita Flat Bread
- 2 Tablespoon *Spinach Puree
- 1/2 Cup Tomato Sauce (I use Cento San Marzano Passata Petite Diced as is)
- 1 Cup shredded Organic Mozzarella Cheese
Preheat oven to 400 degrees. Spread spinach puree over pitas, spread tomato sauce over spinach to cover all the green. Now sprinkle desired amount of cheese all the way to the edges. Place pitas on foil lined baking sheet and bake until cheese melts and begins to brown, 5 to 10 minutes. Let cool and cut into small squares. Yummy and healthy! Side note: you may add carrot puree as well for more vitamins.
*Spinach puree: Cook in skillet with 1 tablespoon of water for 2 minutes or until it wilts. Then blend in a food processor until smooth and creamy.

Strawberry Pancakes using Krusteez pancake mix (from Jennifer J)
Ingredients:
- Pancake mix
- sugar
- vanilla extract
- sliced strawberries
Follow the directions for the 7-8 pancake mixture and add 1 tbsp sugar, 1tsp vanilla extract & about 3 or 4 (or more, your choice!) sliced strawberries. Mix thoroughly, and add water if it looks too thick or more mix if it looks too wet. Cook as recommended by the package for the pancake mix. Super yummy! And it gets more fruit into your kids. Serve with or without syrup.
